MAFRICA and MONCADA, as beneficiary members of the operational group, together with Anafric as a non-beneficiary member, and IRTA, as a technology center, are carrying out the Opticarn project, which aims to optimize meat storage conditions of different species (cattle, sheep, pigs and rabbits) to improve their sensory quality and shelf life, through innovative maturation strategies appropriate to each case.
