The Aragonese sheep develops the automatic cutting of the rack of lamb

Ganaderos desde 1218, Franco y Navarro y la Universidad de Zaragoza promote, under the coordination of Casa de Ganaderos, a research project for the development of a technology that allows the automation of the cutting of lamb ribs, so that it is produced optimally . The objective is to achieve an increase in the value of this noble part of the lamb.

This is how Interempresas.net explains it, “slaughterhouses are not equipped with the appropriate technology to imitate the cut that a butcher makes in lamb ribs, since machinery designed for pigs is used”. This research project aims to develop a new automated technology for lamb ribs, which will increase the quality and safety of the product, avoiding causing damage to the consumer during the consumption of the meat.
